Chef Maria’s Chocolate Protein Power Muffins
Prep time: 15 minutes | Bake time: 16-18 minutes | Yields: 12 Muffins
The Ingredients
For the Muffin Base:
- The Dry:
- 1 cup oat flour (use certified GF if needed)
- ½ cup MD Logic Health (vegan) Chocolate Protein
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- The Wet:
- 2 large eggs (or 2 flax eggs for a vegan option)
- ¾ cup unsweetened plant-based milk (like oat or soy)
- ½ cup pure maple syrup or honey
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- The Mix-ins:
- ½ cup dark chocolate chips
- Optional Texture: ½ cup chopped walnuts (Omit for nut-free)
For the Bakery Finish (Optional but Recommended!):
- ¼ cup melted dark chocolate chips for drizzling
- Fresh raspberries
- Whole walnut pieces (Omit for nut-free)
- A light dusting of powdered sugar
The Instructions
- Prep: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well with coconut oil spray.
- Whisk Dry: In a large bowl, Whisk together the oat flour, Chocolate Protein powder, cocoa powder, baking powder, baking soda, and salt. Ensure there are no lumps.
- Whisk Wet: In a separate medium bowl, whisk together eggs, milk, sweetener, melted oil, and vanilla until smooth.
- Combine: Pour the wet ingredients into the dry. Using a spatula, gently fold until just combined. Do not overmix!
- Fold: Gently fold in the dark chocolate chips (and walnuts, if using).
- Bake: Scoop the batter evenly into the 12 muffin cups. Bake for 16–18 minutes, or until a toothpick inserted into the center comes out mostly clean.
- Cool: Let them cool on a wire rack completely before decorating.
Chef Maria’s Decorating Pro-Tips:
To get the look from the photo, you need to dress them up once they are cool!
- The Drizzle: Melt a small amount of dark chocolate chips in the microwave. Using a spoon (or a small piping bag), zigzag the melted chocolate over the top of the muffins.
- The Garnish: While the drizzle is wet, press one fresh raspberry and one nice walnut piece right on top.
- The Finish: Just before serving, give them a very light dusting of powdered sugar using a small sieve.
Baker’s Note: Allergy-Friendly Options
- Nut-Free: This recipe works perfectly without nuts! Simply omit the walnuts from the batter and the topping. Ensure your milk choice is nut-free (like oat or soy).
- Gluten-Free: Ensure you are using certified gluten-free oat flour.
